chicken noodle bowl

Salaam alaykum dear readers!

 

Sometimes you just feel like a nice bowl of soup. This one has a chicken broth that cooks for hours but you can certainly cut down on the time by buying already made chicken broth.

Whether you call this Phở, chicken noodle soup, or a chicken bowl it hits the spot!

 

First up is making the chicken broth. For this you will use wonderful aromatics such as onion, garlic and ginger that you roast in the oven.

The chicken, aromatics, water and spices will cook until a nice broth comes together. This will be a two part broth meaning you are going to cook the chicken until it's done, then you will remove the chicken but return the bones to the broth to continue cooking for a rich flavor.

You'll then start assembling the bowl. This is where you can get creative with what you put in the bowl. For this bowl it's noodles, chicken, broth, carrots, green onion, radish and hot pepper powder.

Other times I like to add sauteed mushrooms, bean sprouts, and jalapeno. Other popular items include: basil, cilantro, hot pepper slices, lime (not lemon), Sriracha, or hoisen sauce.

Ingredients

  • 1 whole chicken

  • 2 yellow onions peeled & quartered

  • 4 peeled garlic cloves

  • 1 small piece peeled ginger root

  • 16 cups water

  • 1 tablespoon salt

  • 2 teaspoons sugar

  • Cooked rice noodles

  • Shredded carrot

  • Sliced green onion

  • Sliced radish

  • Boiled Egg

  • Hot pepper powder

Instructions

  1. Preheat oven to 400. On a sheet pan add the onions, garlic and ginger. Roast in the oven on the middle rack for 30 minutes. 

  2. In a large pot add the water and chicken. Bring the chicken to a boil and skim the foam off the top. Once the foam is gone turn the heat down to medium and add the roasted aromatics (onion, garlic, ginger), salt & sugar. Cover and cook for 30 minutes or until the chicken is done.

  3. Once the chicken is done, remove the chicken from the pot. Remove the chicken from the bones and return the bones to the pot. Continue to simmer the broth with the bones and vegetables for two hours then remove from the heat & strain the both.

  4. While the broth is cooking, shred the chicken.

  5. Assemble the bowls by adding the noodles to the bottom of the bowl, add your toppings and then ladle the broth on top.
