chicken rice bowl

Salaam alaykum dear readers!

 

This is an easy meal you can put together in an hour. Baked chicken that is shredded, rice and sauteed vegetables.

Before baking chicken I like to place the pieces of chicken in a large bowl, add apple cider vinegar (just enough to get the chicken wet), salt and baking soda. I then rub the chicken really well and then rinse everything off. Once done, place the chicken pieces on parchment paper on your cooking tray. Drizzle the chicken with a little bit of olive or avocado oil and rub all over the pieces. Season the chicken with salt, black pepper and cayenne pepper. Bake the chicken at 400 degrees Fahrenheit until done, about 45 minutes.

While the chicken is cooking make your rice.

While the rice is cooking chop your vegetables. I like to use mushroom, onion, cabbage and Chinese broccoli.

Saute them with a little avocado oil, salt & black pepper until your desired texture. I like the vegetables to still have a little firmness.

When the chicken is done, let cool and then shred into bite sized pieces.

Assemble your chicken bowl by placing your rice in a bowl topped with shredded chicken and sauteed vegetables.

Instructions

  1. Preheat oven to 400. On a sheet pan covered with parchment paper add your chicken pieces. Drizzle with olive oil and season with salt, black pepper and cayenne.  Roast in the oven on the middle rack for 45 minutes or until chicken is done. 

  2. While the chicken cooks, make your rice.

  3. While the rice cooks, chop and saute your vegetables.

  4. When the chicken is done, let cool and then shred into bite sized pieces.

  5. Assemble the bowls by adding the rice to the bottom of the bowl, add your chicken and vegetables. Sahten!
