cucumber tomato salad

Salaam alaykum dear readers!


This is another refreshing salad I came up with by adding whatever I had available. Simple, healthy & delicious!

If you've never had pickled turnips before you should definitely try them. They add a nice acidity to the salad. If you're like me, you'll make a jar to keep handy in the fridge.

Feel free to switch out and change the ingredients. Exploring in the kitchen with recipes is something I am trying to do instead of strictly following recipes. This is one of those times and I encourage you to do the same with your cooking!

  • Cucumber cut into chunks

  • Tomato cut into chunks

  • Cooked asparagus, cut into 1 inch pieces

  • Red onion, sliced thinly

  • Radish, sliced thinly

  • Green beans, cut into 1 inch pieces

  • Pickled Turnips, diced

  • Dried Mint, or fresh finely chopped

  • Extra Virgin olive oil, lemon, Red Wine Vinegar, Balsamic Vinegar, salt & pepper


  1. Combine all chopped vegetables in a bowl and mix.

  2. Drizzle with Extra Virgin olive oil, fresh squeezed lemon, Red Wine Vinegar, Balsamic Vinegar, and salt & pepper to taste. Stir until dressing is incorporated. Enjoy!
