Have you ever wanted to make home-made ice cream but didn't want to buy an ice cream maker? Good news! Here is a recipe that is easy to make and you only need a blender. If you don't have a blender, you can try mixing with a hand held mixer or by hand. I have always used a blender but imagine one of the other options would work.
This recipe has 4 simple ingredients: coffee, coconut milk, sweetened condensed milk, and vanilla.
Let's get to it. Place all ingredients into your blender and pulse until well combined.
Once the mixture is ready, pour into your molds. I used to make these as popsicles, however they were very hard to remove from the molds so I switched to pouring them into large silicon ice cube trays. Each cube is 5 oz and they pop out very easily.
This recipe is enough to fill two trays. Leave a little room at the top of each cube to allow for expansion.
Place the trays in your freezer and let sit overnight or you can check in about six hours to see if done.
As always feel free to switch up the ingredients or get creative and add chocolate, peanut butter, caramel, fruit pieces...the options are endless.

Servings: about 5 cups
1 1/2 cups strong coffee
13.5 oz can full fat coconut milk
7 oz (half can) sweetened condensed milk
1 Tablespoon vanilla
To your blender add the coffee, coconut milk, sweetened condensed milk, and vanilla.
Blend until well combined.
Pour into your molds, leaving a little room at the top of each one for expansion.
Place in the freezer until frozen, about 6-8 hours.
Push out of molds into a bowl and enjoy!
