Salaam alaykum dear readers!

 

This recipe came about when I wanted to use up some leftovers. It should really be called "Leftover Salmon Pasta"!

It's a great mix of flavors with the blackened fish, aromatics (onion, garlic) and fresh steamed asparagus. Did you make the recipe? Comment below.

Servings: 1

Ingredients

  • 1/2 blackened Salmon Filet, broken into pieces

  • 1 cup steamed asparagus, cut into pieces

  • 1/4 cup diced yellow onion

  • 1 small minced garlic glove

  • 1 serving cooked pasta

  • 1 teaspoon grated Parmesan

  • Salt & Pepper to taste

  • Olive oil for sauteing

Instructions

  1. Heat the olive oil on medium/low heat. Add the diced onion and saute until translucent. Add the minced garlic and continue to saute for one minute.

  2. To the onion & garlic, add the asparagus and stir/saute for two minutes. Since the asparagus is already steamed you are just warming it up.

  3. Add the noodles, salmon, salt and pepper to taste. Add a little more oil if necessary and stir to combine just until warmed up.

  4. Sprinkle the Parmesan cheese on top, give it one last stir, and enjoy!
